The beans are very famous and it’s very easy to find them on our tables. They are part of the Italian gastronomic tradition, belonging to “poor dishes”. There are many varieties of beans, some of them are well-known in Italy, others are typical of particular places only. The most famous are borlotti beans, cannellini beans, white Spanish beans, and the red and the black ones.
The white Spanish beans are ideal for meat and tripe.
